Vegan Senses Spring Rolls
Those super spring rolls are easy to make. They can be can be filled with just about anything, but this recipe I will show you how I made mine...

So... I made those vegan meatballs and than next morning I realized I still have few left in my fridge. I am the one and only vegan in my apartment ( to be totally honest I am the only one person who lives here :)) so I have nobody to share my food with :). So I decided to use my vegan meatballs for spring rolls filling. And that was the best idea. They taste REALLY great.
So :
If you want to try my idea you have to make those meat balls first, they are very easy to make and I am going to put recipe for meatballs here so you can follow it step by step.
...And once you have them ready, you can start to make spring rolls...
Mushroom Meatballs
8-12 medium mushrooms, chopped
½ cup gf rolled oats
onion ( optional )
2 tablespoons sunflower seeds ( optional )
2 tablespoon nutritional yeast
1 teaspoon garlic powder
salt, pepper, herbs
bread crumbs
Oil for frying
basil
NO RICE NEEDED
( Original recipe for meatballs have rice in it, but you don't have to give rice now, because you will add rice to spring rolls anyway )
Add all of the ingredients for the meatballs in a food processor or blender, blend until everything sticks together.
Roll mixture into balls. fry until golden brown on each side.
INGREDIENTS
PREPARATION
Cook rice, let it cool for few minutes, get the fork and mix with meatballs together and all ingredients except wrappers in large bowl.
Put with your two hands very gently each wrapper in warm water until pliable, for about 15 seconds. Place 1 table spoon of stuffing on wrapper on the bottom of each wrapper, and wrap your spring rolls.
Fry each spring roll in oil for a short while each side until get crispy ( about 1 minute or even less, be careful they may get very sticky, do it gently ). Set them aside and then eat :)
Serve with dipping sauce or any dip, sweet sauce and enjoy!

- 250-300g cooked rice ( I used black wild rice )
- soy sauce or salt ( I prefer say sauce )
- carrot, cucumber
- any favor dip
- oil for frying
